The advantage of Monday (the only one) is that I find myself alone, in the quiet lunch for lunch during my break of one hour …. an hour, just time to get back from the office, warm my miso soup and prepare my dish obsessive favorites of the moment, salmon tartare, avocado, orange, grapefruit, grated fresh gingerbread, chives, soy sauce, round rice (well I’m still cooking the rice the day before and I’m lucky to have a great fish in at home) / To follow, the noodles sauteed, soba, udon …. and if you have recipes, I’m taking;)
for miso soup: heat 800 ml water in a pan with 2/3 teaspoons of wakame seaweed and a small bag (or 2 teaspoons) of Dashi granules, bring to a boil and then drop to a low heat medium – add 2 tablespoons of miso paste (fermented soy paste). Mix well. Add finely sliced fresh button mushrooms, chopped chives (or new onion), cubed tufo – continue baking for 2 minutes.
for salmon tartare: mix all the ingredients mentioned above!
